In honor of learn how to make an Apricot Cream Pie day here is a recipe.
1 x 425g can apricot halves
1/2 cup sugar
2 tablespoons self-raising flour
1 x 200g carton light sour cream
1 egg
1 teaspoon vanilla essence
cinnamon (optinal)
Method
1. Drain apricots and place in pie dish
2. Combine sugar and flour, add egg, sour cream and vanilla. Beat until smooth
3. Pour over apricots and sprinkle with cinnamon
4. Bake at 190 degrees C for 40 minutes
